Ingredients
2 slices cooked bacon per sandwich
6 large (sandwich size) tilapia filets
Blackening seasoning
2 squares of Lemon Pepper Sauté Express® Sauté Starter
6 hoagie rolls
Lettuce
Tomato
Mayo
Instructions
Heat large skillet over medium-low heat. While skillet is heating, sprinkle both sides of tilapia filets liberally with blackening seasoning.
Once skillet is heated, melt one square of Lemon Pepper Sauté Express® Sauté Starter until it begins to bubble (be careful not to let it burn). Cook 3 tilapia filets at a time, blackening/sauteing both sides of the fish until it is cooked through. Remove filets to a plate. Wipe skillet clean with a paper towel, and repeat the process with the remaining filets.
Once filets are cooked, assemble po’ boys: Slice hoagie rolls in half, top with one tilapia filet, lettuce, sliced tomato, bacon, and mayo. Serve immediately.
